Bacon and Egg Breakfast Quesadilla
Hello Healthy Bacon and Egg Breakfast Quesadilla
While not personally an egg whites type, this otherwise looks pretty awesome.

Bacon and Egg Breakfast Quesadilla
Ingredients
- 2 strips center-cut bacon, chopped
- 2 tablespoons chopped green onions
- 4 egg whites, whisked until slightly frothy
- 1 ( 8-inch diameter) low-fat, whole-wheat tortilla
- 1 ounce (about 1/2 cup) finely shredded, reduced-fat Cheddar cheese
- 1 tablespoon canned green chilies, or more to taste
Directions
Place a small nonstick skillet over medium-high heat, and add the bacon. Cook it for 5–7 minutes, stirring occasionally, until the bacon is crisp. Add the onions, and cook until just heated. Remove the mixture from the pan, and cover it to keep it warm.
Drain any excess grease. Return the skillet to the stove, and coat with cooking spray if needed. Add the eggs and cook, stirring often, until firm. Stir in the bacon mixture.
Place a nonstick skillet that’s larger than the tortilla over medium-high heat. Add the tortilla to the pan. Sprinkle half of the cheese over half of the tortilla. Then, sprinkle the egg mixture and the chilies over that. Sprinkle on the remaining cheese. Fold the bare half over the filled half. Cook it for about 2 minutes, until the cheese is beginning to melt and it is lightly browned in spots. Carefully flip the quesadilla, and cook it another 2 minutes, until the cheese is completely melted.

Today is a very sad day as Kayla is leaving us to pursue other ventures. My breakfasts shall never be the same. In honor of her culinary artistry I am posting a compilation of breakfast creations she has made for me this past year.

Always striving to better her best creations, Kayla has created something beyond comparison. Beyond description. Something so awe inspiring it can only be called one thing.

4 meats, 3 cheeses, scrambled egg, hash browns and chipotle sauce all on whole grain grilled wheat bread. Arby’s “Meat Mountain” can not even compare to this deliciously created collection of calories. She grilled the ham with the Swiss cheese, and the Turkey with the Provolone. The American cheese melted to the scrambled eggs and bacon completing 3 levels of brilliant flavor combinations only to have the sausage, hash browns and chipotle sauce added in for that little something special.
My New Favorite Breakfast Food
Kayla with a “K” totally out did herself this morning, and because of it I shall never look at pancakes the same. Bacon Pancakes. Yes, that’s right. She made Bacon Pancakes.
Take pancakes, add bacon while cooking, drizzle with maple syrup, and launch yourself into the most blissful breakfast experience known to man.
